Friends, it has happened. The nasty flu has hit our house, hard… and it’s downright miserable.
Friday morning it hit Marc like a ton of bricks, and it has barely relented since then. The first two days were fever-filled, he never left our bedroom and wasn’t awake for more than half an hour. In an effort to help him sleep better, I slept on the couch all weekend… it was actually sort of fun, a little like camping out
While I have been doing my absolute best to feed him the most nourishing foods I can think of, I still don’t feel like I’m doing enough. Poor guy has already had his fill of ginger and oil of oregano that I keep stuffing down his throat… can’t say that I blame him on the oil of oregano though, that stuff is intense.
I just feel awful for him. Gosh, is this how every wife and/or mother feels when they are faced with a sick loved one? I have never seen Marc this sick, and my worry meter is sky high! Thankfully the fever is completely gone now, but I have never washed those bed sheets or his pj’s as much as I have in the last 4 days. Admittedly, I have never done this much laudry since we’ve been married, period! He has always done it!
Of course, I also want to make sure Marc gets enough food to keep him strong. Thankfully he has had no stomach issues, so he has been able to eat pretty much everything. For the most part he has just wanted toast, but I know he needs more than that. I can only give him so much water and Vega Post-Workout Recovery drink (fabulous for hydration and sneaking in more vitamins and minerals!), he needs something substantial to get his energy up to fight this thing full force.
Saturday, after making breakfast and after he went back to bed, I got to grocery shopping. I came home with a load of produce and got cracking…
The only thing I knew I could do was make soup… and to make that soup jam-packed with superfood goodness to knock that virus out of my husband.
I went straight to Meghan Telpner’s recipe page and found a few of her broth recipes. To cover all my bases, I decided to combine the two.
I chopped, and chopped… and chopped.
Threw everything in a large pot, and let that goodness simmer for over two hours.
After straining out the veggies, I was left with a gorgeous broth to pack my freezer with!
With the broth, and the veggies I strained from it, I decided to make Dreena Burton‘s Mellow Lentil ‘Sniffle’ Soup from Eat, Drink, and Be Vegan…
Can I just say holy YUMMMM?!!! It hit the spot even for me. I’m also trying to keep well-nourished so that I don’t get sick next. Last thing we need is the never-ending cycle.
Needless to say, the soup went down easy, and fast!
Well, it’s days later and the flu may not have left our home yet… but it won’t be here for long. I am praying hard that it won’t as Marc is getting anxious about not being able to run. His patience is starting to wear a little thin. Going two days in a row of not running is painful for him and his training, let alone five.
To be absolutely honest, I have loved taking care of Marc. I find joy in serving him in this way, but sadly I have had to go back to work.

it’s been SO delicious! we’ve been eating a LOT of soup this week… he’s finally on the mend, it’s so good to see him back to his normal self
I have never maid my own broth before. You make it look pretty easy though! I just dont know if I have room to store leftovers!
oh it IS so easy! a ton of chopping, but I find that to be quite theraputic
next time I will let it simmer for longer to really concentrate the broth more… maybe 4-6 hours. You can make the broth according to how much you want, that’s the beauty of it! All you have to do is chop up however many veggies you want, pour in the water to just cover the veggies and simmer! Easy peasy. I made a huge pot because I wanted it to last a week.
i hope this week he is all better! Making your own broth really does wonders. Plus it makes the house smell amazing!

Actually, Marc is doing well now, although now he’s sore from getting back to running after 9 days off! Doesn’t matter how many years you’ve been running, getting back into it after a break is rough!
